By replacing the basil with wild garlic leaves (picked by ourselves the same day its turned into pesto), the olive oil with Summer Harvests Cold Pressed Rapeseed Oil, Parmesan with Fifes own Anster cheese (which we have made vegetarian, specially for us) and pine nuts with walnuts, weve created the Scottish version of pesto.
