Torralba Mahon DOP
Torralba Mahon DOP is the iconic cheese of Menorca with a distinctive square shape and rounded edges. The vibrant, orange coloured rind is created by rubbing it with pimenton and olive oil as it matures. It has a Protected Designation of Origin. The semi-hard, sometimes crumbly texture has a fruity, fresh and creamy aroma complemented by rich, savoury and yoghurty flavours.
Coated in lard and rosemary, this Manchego style cheese has a dense and lightly crunchy texture with buttery and herbal aromas. It is full-flavoured and savoury, delicate and elegant with a long and balsanced finish.
Payoyo de Cabra
This semi hard goats' milk cheese has fresh floral and herbaceous notes, a gentle acidity, hints of nuts and a long, clean finish.
Payoyo cheese is made in the village of Villaluenga del Rosario, in the province of Cádiz in Andalucia, from the pasteurised milk of indigenous Payoya goats that graze there in the Sierra de Grazalema mountains.
This product has been awarded with 3 stars in the Great Taste Awards 2018.
La Peral has a yeasty, briny aroma and the paste is ivory coloured, lightly speckled with blue moulds. The taste is mild, creamy and mushroomy, developing a bit of spice as it matures.
